What is tartaric acid?

It exists in the plants such as grapes, tamarindus and so on, it is also one of the organic acids in grape wine.

Pasteur was the first person that discovered the fact that the tartaric acids with different structures are characterized with diverse optical activities,

Like that gloves are classified into “right” and “left” ones, therefore, the feature is also called “chirality”.

This discovery can be said to be a milestone in the history of chemistry. 


Explanation: Tartaric acid has three chemical isomers, namely L(+)-tartaric acid (dextro), D(-)-tartaric acid (levo) and Meso-tartaric acid. Generally speaking, tartaric acid produced via chemical synthesis is DL-tartaric acid (racemic) combined with 50% of L(+)-tartaric acid and 50% of D(-)-tartaric acid.

L(+)-tartaric acid, a natural configuration, is also named d-tartaric acid, which widely exists in multiple kinds of plants like grape and tamarind;

D(-)-tartaric acid, which is also called l-tartaric acid, widely exists in fruits and leaves of Bauhinia Linn.

L(+)-tartaric acid and D(-)-tartaric acid can be respectively obtained through transformation of epoxysuccinic acid with different biological enzymes, or through chemical resolution of DL-tartaric acid.

Therefore, like DL-malic acid, biosynthesis L(+)-tartaric acid has been widely procured and used by a number of international large-scale food enterprises. It is widely applied in the following fields:

Grape wine pH adjuster

Drug resolving agent

L(+)-tartaric acid is the most important resolving agent in chiral compound synthesis. It is also the salt forming agent in some drugs.

Food emulsifying agent

L(+)-tartaric acid is the main raw materials in food emulsifying agent DATEM. The emulsifying agent DATEM has outstanding functions in emulsification, dispersion and anti-aging. It is a sound food emulsifying agent and dispersion agent, thus capable of enhancing dough’s elasticity, tenacity and gas-holding capacity.

Gypsum retarder

L(+)-tartaric acid is the most important gypsum retarder in construction material, paste, it is also one of the best retarders among the counterparts. Additionally, it can also serve as the concrete retarder, especially for artesian concrete.

Raw material of cosmetics

L(+)-tartaric acid is also used in weight-loss tea and cosmetics ingredients.

Metal polishing agent

L(+)-tartaric acid is a powerful complexing agent in metal ion, thus, it is used as the cleansing agent and polishing agent for metal’s surface.
